Ingredients

  • 4 salmon fillets
  • 2 medium zucchini, sliced into half moons
  • 1 pint cherry tomatoes
  • 1/2 red onion, cut into wedges
  • 1/2 cup pitted olives
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1 lemon, half sliced and half juiced
  • 2 tablespoons chopped parsley

Method

  1. Heat the oven to 425°F. Line a sheet pan with parchment for easier cleanup.
  2. Toss zucchini, tomatoes, red onion, and olives with 2 tablespoons olive oil, salt, pepper, coriander, and oregano. Spread on the pan and roast for 8 minutes.
  3. Remove the pan, add the salmon, and brush the fillets with the remaining olive oil and lemon juice. Tuck lemon slices around the pan.
  4. Roast for 10 more minutes, or until the salmon flakes easily and the vegetables are lightly caramelized.
  5. Finish with chopped parsley and serve straight from the pan.

Notes: Thicker fillets may need another 2 minutes. Add a spoonful of yogurt on the side for a creamy contrast.
