Ingredients

  • 1 pound peeled shrimp
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 garlic cloves, minced
  • 1 cup pearl couscous
  • 1 1/4 cups chicken or vegetable broth
  • 1/2 cup water
  • Zest and juice of 1 lemon
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped dill
  • 1/4 cup crumbled feta, optional

Method

  1. Season the shrimp with half the salt and pepper. Heat 1 tablespoon olive oil in a skillet and cook the shrimp for 1 to 2 minutes per side, then transfer to a plate.
  2. Add the remaining olive oil and garlic to the skillet. Stir for 30 seconds, then add the pearl couscous and toast for 1 minute.
  3. Pour in broth and water. Simmer for 8 to 10 minutes until the couscous is tender.
  4. Return the shrimp to the pan with lemon zest, lemon juice, herbs, and the remaining salt and pepper.
  5. Top with feta if using and serve right away.

Notes: Standard couscous can be used, but reduce the liquid and simmer time accordingly.
