Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 1/4 cups dry orzo
  • 2 cups low-sodium chicken broth
  • 1/2 cup water
  • 1 teaspoon dried oregano
  • Zest and juice of 1 large lemon
  • 3 cups baby spinach
  • 1/3 cup crumbled feta
  • 2 tablespoons chopped dill or parsley

Method

  1. Pat the chicken dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat, then sear the chicken until browned on both sides, about 6 to 8 minutes total. Remove to a plate.
  2. Lower the heat to medium. Add onion and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds.
  3. Add orzo and toast for 1 minute. Pour in broth and water, then stir in oregano and lemon zest.
  4. Nestle the chicken back into the skillet. Cover and simmer for 10 to 12 minutes, until the orzo is tender and the chicken is cooked through.
  5. Stir in spinach until wilted. Finish with lemon juice, feta, and fresh herbs. Taste and adjust seasoning before serving.

Notes: If the pan looks dry before the orzo is tender, add a splash of hot water. Boneless chicken breast works too, but thighs stay juicier.
