Ingredients
- 4 bell peppers, halved lengthwise and seeded
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can chickpeas, drained and rinsed
- 2 cups cooked rice
- 1 teaspoon ground cumin
- 1/2 teaspoon dried mint
- 1/2 teaspoon kosher salt
- 1 cup crushed tomatoes
- 1/2 cup crumbled feta
- 2 tablespoons chopped parsley
- Zest of 1 lemon
Method
- Heat the oven to 400°F. Arrange the pepper halves cut side up in a baking dish.
- Heat olive oil in a skillet over medium heat. Cook onion until soft, then stir in garlic, chickpeas, cumin, mint, and salt.
- Add rice, crushed tomatoes, lemon zest, and half the feta. Stir until warmed through.
- Fill the pepper halves with the mixture and cover loosely with foil. Bake for 20 minutes, then uncover and bake 10 minutes more until the peppers are tender.
- Top with the remaining feta and parsley before serving.
Notes: If you like softer peppers, pre-bake the empty halves for 10 minutes before filling.
