Ingredients

  • 2 tablespoons olive oil
  • 1 shallot, finely chopped
  • 3 garlic cloves, sliced
  • 1 teaspoon chopped rosemary
  • 2 cans cannellini beans, drained and rinsed
  • 3/4 cup vegetable broth
  • 1/4 cup heavy cream
  • 4 cups chopped kale or spinach
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes
  • Black pepper to taste
  • 2 tablespoons grated Parmesan, optional
  • Lemon wedges for serving

Method

  1. Warm olive oil in a skillet over medium heat. Add shallot and cook until softened, about 3 minutes.
  2. Add garlic and rosemary, stirring for 30 seconds until fragrant.
  3. Stir in beans, broth, cream, salt, and red pepper flakes. Simmer gently for 8 minutes.
  4. Add greens and cook until wilted and tender, 3 to 4 minutes. Mash a small portion of the beans against the side of the pan to thicken the sauce if desired.
  5. Season with black pepper and finish with Parmesan and lemon wedges.

Notes: For a vegan version, skip the cream and Parmesan and use a splash of oat cream or extra broth.
